Why do you harvest your thyme honey in Crete?
It's a question we often ask ourselves, given our usual commitment to local sourcing. The answer is simple: Hippocrates' thyme finds in Crete a unique terroir unlike any other—abundant sunshine, mineral-rich soils, and wild Mediterranean vegetation that allow it to express its full character. This exceptional environment produces a remarkable honey, prized for both its distinctive flavour and its exceptional quality.
That said, this choice was never made lightly. We work closely with carefully selected Cretan beekeepers who share our commitment to respectful beekeeping and environmental stewardship—the very same values that have guided our Apiculture Douce® philosophy from the beginning. This close partnership enables us to guarantee a honey harvested with genuine respect for bees and nature.
Going beyond our usual geographical boundaries is an exception we have chosen deliberately. Do your Cretan beekeepers follow the same standards as your French beekeepers?
Absolutely. This is a non-negotiable requirement. The Cretan beekeepers we work with were chosen because they share the values of our Apiculture Douce® charter: no harmful practices, respect for the bees, harvesting only the surplus honey, and protecting local biodiversity.
Like our French beekeepers, they are paid a fair price above market rates as part of an ethical and sustainable supply chain. Distance never compromises our standards.
What is Apiculture Douce®?
Apiculture Douce® is the beekeeping method developed by Catherine Flurin over more than 40 years, placing the well-being of bees at the heart of every decision.
In practice, this means harvesting only the bees' surplus honey, never destroying queen bees, keeping smoker use to an absolute minimum, and training beekeepers to better understand and work in harmony with bee behaviour. It is a respectful, non-invasive approach to beekeeping that goes well beyond the requirements of organic certification.

Nous vous garantissons que nos miels sont issus uniquement de l'apiculture biologique, avec des abeilles libres non nourries au sucre, et un miel récolté à froid et mis en pot à la main.
